Need a good salad and a Starch/Grain/Pasta side dish for Chicken Saltimbocca

Suggestions? I'm having that for dinner tomorrow night for friends.

    1. an all-Italian salad of romaine, radicchio, and endive with a simple dijon-garlic vinaigrette. You could dress it up with grape tomatoes or croutons, and/or shaved parm or chevre.

          How about buttered noodles with parmesan and garlic (or lighter, spaghetti squash). Or go full throttle and have fettucine Alfredo?

              • It is usally served with a sauted green. Spianch , Rapini,Swiss Chard and potaotes.

                  1. I second the cooked spinach or swiss chard idea and a good loaf of bread. Yum.

                      1. I always have it served over a pasta. The juices make a great sauce and you get a little bite of everything all at once.

                        Or as mentioned served over a sauted spinach.

                          1. Spinach Salad, Orzo.
