Hi Mshap, FYI from the Paragary website. The dressing is 4:1. I love this salad, too.

    6 oz. thinly sliced mushrooms
    1 oz. Jarlsberg cheese
    1 tbsp fresh parsley chiffonade
2 oz. lemon/extra virgin olive oil dressing
    Salt and pepper to taste

How's the Jarslberg done? Shreds or chunks?

i dont have a hard copy, but i remember asking one of the cooks (i use to work there) what the dressing was and he said just olive oil and lemon juice with a lil salt and pepper. you could probably use a 1:3 acid (lemon juice) to oil ratio. if thats too sour, take a lil lemon juice out and add in some lemon rind. The mushrooms are just your white button mushrooms sliced very thinly on a mandoline, too hard to do with a knife, i tried. and the cheese is jarlsberg. and thats about it, just mushrooms, cheese, lemon, and oil.
