oyster and eggplant casserole (New Orleans)
Does anyone have a recipe for this? We used to use the recipe from Richard Collin's New Orleans Cookbook and loved it. Unfortunately when we moved abroad, someone in customs confiscated this very cookbook (a chowhound, no doubt). I just loved this cookbook... Any help out there in Chowhoundland?
I didn't see one in the Galatoire's cookbook. I did find one in a Gulf Coast cookbook I got from my MIL. It calls for cheddar cheese, which sound suspicious to me. Here are the ingredients:
1 eggplant, baked until soft and cubed
1/4 c butter
3/4 c onion, sauteed in above butter, then add
1/2 c breadcrumbs
1/2 t salt
1/8 t pepper
1 1/2 pints raw oysters and juice -- cook oysters in juice about 5 minutes, just until the edges curl.
Make alternating layers of eggplant, onion, oysters, onion, repeat.
1/2 c cream
1/4 c shredded cheddar
Pour cream over everything, sprinkle cheese, bake 15 minutes at 350 F.
I've been checking cookbooks out of the library lately, I'll see if I can find that one.
