Best Chinese in Bridgewater/Somerville area?

As someone who has had wonderful Chinese in L.A. and NYC, I am wondering if there's any outstanding Chinese food in the Central Jersey area, ideally not far from Bridgewater, where my parents live. I prefer vegetarian and nothing too greasy, if that makes a difference (easy to find in L.A., maybe not so here?).
If you're willing to come a bit further, Hungs in Scotch Plains in very good. They specialize in Shanghai style and are very high quality, for instance they will use filet mignon in several of their speciality steak dishes. Amazing scallion pancakes, when they don't run out of them. They even have the wide, homemade crispy noodles, something that seems hard to find these days. We've had several of their vegetarian selections - such as the tofu dishes and have been very satisfied with them too.
Unfortunately, there doesn't seem to be much in the way of decent Chinese food in BW or S-ville (that I've found). However, a 10 minute drive east on 78 to exit 33 in Basking Ridge gets you to Ling Ling in the Riverwalk strip mall (665 Martinsville Road, Basking Ridge, NJ 07920). Better is a half-hour ride north up 287 to Rt. 10 east to Mr. Chu (44 State Route 10, East Hanover, NJ).
Hunan Delight on easton ave in somerset ( rutgers plaza ) is a sleeper. They have a very good menu. Food and service is always excellent. Very good veitarian dishes. The pineapple chicken served IN a pineapple is the best though.
