HELP! How long does duck fat keep in the fridge!?

Can I use the stuff I rendered before, or do I have to render more for my duck liver pater? I would say the fat has been in the fridge for a couple of months....

    1. I think a lot has to do with how you store it. I am careful to strain the fat before returning it to the jar. Bits of stuff in the fat may help it turn rancid. I've had a batch for about 2 years, but I do use it often so it gets recooked.

      1. Good rule of thumb is to let your nose be your guide. Does it smell "off" or rancid? No matter how long it has been stored, toss it. Does it smell clean and fresh, like duck fat? Take a small taste. Is it meltingly soft and fresh-tasting? Again, no matter how long it has been stored, it will likely be delicious.

        Duck fat is fabulous for sauteeing potatoes!

        1. Oh thanks everyone...all your comments were helpful. I had two jars, and one had some bits and pieces and aspic-y stuff at the I was confident to use the purer one, and after some careful sniffing, I decided the other one was history.

          And now, I'm off to serve my duck liver pate! THANKS!
