My most excellent independent butcher shop, The Butcher Block agreed to start stocking Dufour puff pastry and got interested in stocking their hors d'oeuvres. They got in 4 varieties. I have purchased 3 so far. These are the same ones that William's Sonama sell that cost out at $1.61 @ before shipping. My local shop has them priced at $14.99/12 much better. Okay last night I followed the package directions and baked them off for cocktails at their suggested times and temps. The stilton and cranberry basically burned. The shrimp in puff pastry with dill and ricotta were just average. The spanakopita were okay. Tonight I decided to follow my own instincts. Baked the stilton and cranberry for 20 mins at 350. Delicious. Took them out and put the other 2 in at 350 F. for 25 minutes. The flavors were 100% improved. Buy them again? Oh Yes! Follow their baking directions? No Way!

Oh, man, thanks for the heads-up on this! My SIL is having everyone in the family (except us, thank GOODNESS) out to Denver for Christmas again this year, and I sent them three different Dufour packages. I'll email her and let her know to adjust the cooking times and temps.

I served the truffled risotto ones for a dinner party tonight. Since the oven was already cooking along at 350, the pastries went in at that temp -- came out lovely and delicious.
