Very gingery gingerbread cookie recipe please!

Want to make some gingerbread cookies that are more gingrey than what one usually finds. Can you recommend a recipe?

    Take a look at this one - I made these last year and they were a huge hit - very gingery, a soft cookie. My favorite!

      Yes, yes! Sivyaliah is right...they are tremendous! Have made them 3 times now...they are not for the faint of heart!

      This may go without saying on this site, but make sure your ground ginger is fairly "fresh" hasn't been sitting around the cupboard for the last several Christmases...we just made a batch at MIL's house and tripled the amount of ginger called for, and you can't taste it at all. Nice molasses cookies, though.

        grate fresh ginger root into your recipe....guarantee it will be gingery enough for you! Powdered ginger is nothing close in flavor to fresh ginger.

          And stir in some chopped crystalized ginger into the batter, too, for some extra oomph.
