I really like lengua. Who makes the best lengua taco? I've had it at Arandinas and liked it very much.

Any other exotic meats, like tripe or cabrito brains? Where should I go?

If you are looking for tripe, find any Mexican place that serves good menudo.

Try mollejas (Sweetbreads)
It's the thyroid gland of the cow.
Some of it sounds nasty, but then again so does foie gras and caviar.
All good stuff.

Sweetbreads are actually the thymus, a different organ than the thyroid gland. But delicious, nonetheless.

I love sweetbreads too. they are not easy to find on menus around town. I know that Zoot has them from time to time. I'd like to know a Mexican place that serves them too. How about in Houston or Dallas? anyone know?

I love lengua, too. Try the one with green sauce at La Michoacana. Just a few days ago I had a good lengua plate at Habanero.
