butternut squash soup - 11/06 food & wine magazine
i just tried this recipe for the first time and am really pleased with the results. the name is somewhat misleading - it's not your typical smooth pureed butternut squash soup (which i'm also quite fond of) - it's really hearty, and pretty healthy, full of beans and greens and carrots and other good stuff in addition to the squash. and bacon - which may not be healthy, but there's not a lot of it and it adds a lot of flavor. i pretty much followed the recipe word for word, except without the red bell pepper because i forgot to buy one, and i added some more beans because i had more, and a little more bacon because bacon is good.
