What I Ended up Bringing to Office Buffet

I know, I know...you've all been dying to hear about this (heh heh!)...but, you know, so many times people ask for advice or input on the board and then we never hear about how it ended up, whether they used anyone's advice or recipe or not. Just me and my curiosity, I guess, but I made a Chipotle Chicken Stew from Cooking Light that was very good. I poached the bone-in chicken breasts to make the broth rather than use canned and I used frozen corn instead of carrots but it was healthy and tasted great with extra cilantro and crushed up Tostito-style chips as garnishes.   1. The recipe looks delicious. Maybe I'll give it a try. Does it really make 16 servings?

    1. Well, there are about 25 people in my immediate office and there was nothing left of this by 3 p.m. so I would venture to say that 16 servings is correct.

      1. I've had great success and feedback bringing brisket to the office potluck party. I can precook it a day or two before, cool it, slice what I need and store it in its own gravy/cooking liquid. It can be warmed up either on a stovetop, in an oven, or in the microwave. It is always more succulent and tender after cooling and reheating. Always a big hit and brings a taste of Hannukah to the mostly Christmas festivities.
