I dunno what I made, but it was GOOD!

Working on healthier cooking and man did this one turn out great:

4 thin sliced, boneless, skinless chicken breasts sprinkled with salt, pepper, garlic, thyme, rosemary, nutmeg & cinnamon quickly sauteed over relatively high heat in 1 Tablespoon of olive oil.

Deglazed the pan with 1/2c of sherry and 2T balsamic. Added in two chopped roma tomatoes, one good sized diced shallot, one large chopped portabello mushroom and 1/2 cup or so of chicken broth. I think I added a sprinkle more of nutmeg and cinnamon and a bit more salt and pepper (just kept tasting). Then put the chicken back into the pan, covered with the sauce and put in the oven (covered) on 300 while I worked out - about 60 minutes.

When this came out the chicken was so tender and flavorful. I cooked it down just a hair on the stove top and we've been oohing and aaahing over it since (we each had one last night and one small one today - YUM!). I swear if healthier choices can be this full of flavor and satisfying....I'm all for it.

  1. Ooo - thanks for sharing! This does sound good! And after the first of the year, someone in this house with high cholesterol (not me) is going back on a lower fat diet. Wouldn't hurt me, either.
