      <content>In Chiang Mai I always recommend Huen Penh on Ratchamanka Rd 
or Hong Tauw Inn -- it's just northwest of the city on Nimmanheiman Rd (across from the Amari Hotel).

      <content>Food courts, street stalls and carts offer endless options in all these cities.

Dining from individual stalls will often result in better dishes.
Each vendor will specialize in one dish, rather than try to be all things to all tastes, like a full menu restaurant.
