Any recommendations for a white wine for white sangria?
When I make tisana, I use semi-seco cava. If you use a drier cava/champagne, then you may need to compensate by adding some sugar.
Riesling, not too sweet as you're adding "sweet" to it... Try Kabinett or a Halb-Trocken
For a sparkling twist, try Moscato d'Asti.
Something dry, unassertive and unoaked, like a pinot grigio.
