Where to find - cassoulet ingredients

I'm making a cassoulet for Christmas eve and need the following: duck and veal demi-glace, duck fat, Armagnac sausage, and French garlic sausage (fully cooked). I frequent Arrowwine, and they have the ventreche and confit, but I didn't see any of the others.

Before I to go Dean & DeLuca, Balducci's, etc., I thought to confirm who has what.

  1. I would think you could find all of that at Dean & DeLuca, but I'd certainly call first.

    1. Chef's Catalog carries D'Artagnan's cassoulet kit containing everything you mentioned above.

      1. I beleive Wegman's has the demi-glace, but I'd call first. If they do, it's guaranteed to be cheaper than the aforementioned stores.
