        <content>I noticed these fresh mushrooms at my supermarket and I have never seen them fresh before?

      <content>Though not through Mellissa's, I buy them all the time in the Japanese markets to use in my teppanyaki.  I'll usually throw together at least 3 different types of mushrooms along with some nappa cabbage and gyu-tan and/or some thinly-sliced beef.  A quick dip in some ponzu and you've got a quick, healthy, delicious, and low-prep meal!</content>

      <content>I think the ponzu would help a lot, wood ears aren't very flavorful. Seems to be more of a textural thing for me. I love this time of year, we are able to get such a wonderful selection of mushrooms!</content>

      <content>Just be careful there is confusion in the marketplace between wood ears and cloud ears.  Cloud ears tend to be more tender and they don't have that annoying stub that you need to cut off on wood ears (sometimes).   I usually like to use cloud ears and cook it with stir fried lotus roots, sliced flank steak, with oyster sauce.

I also use wood ears/cloud ears(prefer) when making jap chae.</content>
