chicken one-pot meal recipes?

i have a 3 lb. bell & evans chicken that i have to cook ASAP. i bought two yesterday and came home to a dying refridgerator. i roasted one last night and i'm looking for a one-pot meal for the other one (like a stew or braise). any suggestions?

    One pot Chicken Paprikash:
    Dice an onion (or two) and cook in 2 or 3 tbsp of butter and/or oil until transparent. Wash cut-up chicken, leave wet. Salt chicken and liberally sprinkle with Hungarian sweet paprika. Layer chicken in pot atop onion, cover, bring to boil, then reduce to low heat. An hour + 10-20 minutes later you'll have a stew that is delish over rice.

      Arroz con Pollo. Very like a paella with just chicken. Easy and good.

          I always loved my mother's dish of essentially stewed chicken with rice and carrots. Homey and delicious.
          Cut up chicken, bake w/ rice, broth and carrots.

            Chicken and dumplings are always good, especially this time of the year.

              Ditto on chicken and dumplings. The big fluffy dumplings not the noodly type. I find Bell and Evans chickens do not have the flavor to support coq au vin. They are too bland. Coq au vin needs an old rooster with lots of flavor and is a bit tough to take to the long braise.
