        <content>I cook and bake a lot but have never made truffles.  I'd like to try them.  I'll take all advice for a good basic but also delicious recipe.  Is a candy thermometer necessary?</content>

      <content>1 1/3 C. heavy cream
2 Tbs. butter
dash of salt
1 kb. good quality dark chocolate...something like Sharffen Berger 70%
flavoring of you choice, I never measure, maybe a Tbs. or so

Melt the chocolate in a double boiler over simmering water but the water should not touch the bottom of the pan. When the chocolate has melted remove the top of the double boiler. Be sure that no water comes near the melted choholate, even 1 drop will cause the chocolate to seize. Add butter and beat well to combine, add the salt and cream and mix thoroughly. Add falvoring of your choice, Kahlua? Grand Marnier? Chambord? nothing? Roll into balls and roll in cocoa powder and chill well.  When thoroughly chilled you can then dip in more melted chocolate and chill again or roll tin chopped nuts or decorate anyway you would like and chill until serving time.</content>
