Spicey Pumpkin Enchilada recipe--opinions?
Has anybody made this recipe?
I'm thinking about making it, but subbing black beans/chipotle chiles/a bit of sour cream for the chicken filling. However, I just can't tell how weird this recipe is (have I lost my mind by considering an enchilada recipe with pumpkin sauce?).
Any opinions appreciated!
