Spicey Pumpkin Enchilada recipe--opinions?

Has anybody made this recipe?

I'm thinking about making it, but subbing black beans/chipotle chiles/a bit of sour cream for the chicken filling. However, I just can't tell how weird this recipe is (have I lost my mind by considering an enchilada recipe with pumpkin sauce?).

Any opinions appreciated!

  1. sounds delicious to me. I've made pumpkin filled enchiladas before. I am a huge pumpkin fan, though, so it may be skewing my opinion. Sprinkle some pumpkin seeds on top.

    1. Here's another winter squash-filled enchilada recipe that I used to make:

      The pumpkin sauce sounds kind of interesting--winter squash and chilies seem to go together well, so it could work out.

        Thanks for the link. The recipe is actually, in part, an effort to use up some pumpkin puree I bought for another recipe. So, I'm not really looking for winter-squash filled enchilada ideas, more thoughts on this specific recipe!

        1. that sounds good... i had pumpkin chili a few weeks ago at a winery event and it was lovely, just subtle hint of it like this recipe
