How long will these things stay fresh?

I am having a chili cookoff on Saturday and in order to save some time, I want to make some of the food ahead of time. Can someone please clue me in to how far in advance I can make the following foods without them going bad or changing flavor somehow?

Homemade Chex Mix
Rice Krispy Treats
Corn bread Muffins

I know its nothing fancy, but if I could these things out of the way in advance, the more time I will have to perfect my kick ass chili. Thanks for your help!

  1. Chex Mix will last several days easily. Indeed, it may even be better once the flavors have a chance to meld. Rice Krispie Treats will last a day or two; wrap individual ones tightly in plastic. Corn muffins can certainly be made a day or two ahead, but will be noticeably better right out of the oven. Since it's a quick bread, you can mix the dry and wet ingredients in separate containers and combine them to bake once your chili is simmering. Don't make the batter itself ahead of time, or the leavening will lose all of its power before you make the muffins.

    1. i completely disagree. the 1st 2 things will last FOREVER. no need to refrig either. the corn muffins, sealed in a plastic container/bag, will last 2 wks in the frig. i do them all the time.
