Cuccia or St. Lucy's Day Soup

Anyone have recipes for Cuccia? I've come across some simple ones on the 'net, but not quite it.

    Farro and Bean Minestrone
    2 tbls olive oil, plus evtra for drizzling
    1 onion chopped,1 carrot scraped and chopped,1 celery stalk chopped,1 clove garlic , chopped
    1/2 cup dry white wine
    2 ripe tomatoes , peeled, seeded and chopped
    2 fresh sage leaves
    3/4 cup cannellini beans, soaked over night
    1 cup farro , soaked over night
    Salt and Pepper
    Heat the olive oil in a stock pot. add the onion ,celery carrots and garlic and cook over low heat, strring occasionally cook for about 5 minutesAdd wine and cook until the wine has evaporated. Add the sage and chopped tomatoes cook for about 10minutes . Add the beans anf farro. Add 1 1/2 quarts of water. Bring to a boil and cook until beans and farro are tender This should take about 1 1/2 hours. Serve in warm soup bowls and drizzle with olive oil.
