        <content>I tried this today and the results were so-so - I started with unsalted shelled peanuts - tossed them in a plastic bag with a little peanut oil then added a freshly ground mix of spices and put them on a baking tray at about 250-275 degrees for half an hour. Good but nothing to write home about. 

Anyone got suggestions about how to do this right?
Also any interesing suggestions for the spice mix?</content>

      <content>I don't know if this will help but I usually coat mine with butter, then toss nuts with mix, then bake at 350 for about a half an hour. You might want to turn the heat up a little.
I usually do a cajun or garlic &amp; salt spice mix.</content>

      <content>They do quite well stir-fried with a little oil in a wok or saute pan.  

They continue to cook after your remove them from the pan, so take them out just as they start to change color.  You can always cook them more, but even one burned black spot will make them inedible.

Drain them on a couple of layers of flattened brown paper bags (which absorb oil much better than paper towels).</content>
