Blue Corn Meal

I just bought some of this on a whim. If you've ever been to the Dekalb Farmer's Market you'll understand how this happens-- the place is amazing. Anyway, now I'm wondering what to make with it? The color is pretty strong so I'm not sure how great it would be as bread or pancakes. Any suggestions?

Pancakes are great, especially with bananas or blueberries in them.
