I need to make a green salad for a large group...50ish...on Sat. Planning on variously textured mixed greens, cherry/grape tomatoes, spiced or candied pecans, and a Steen's cane syrup glaze. Is this too plain? Do you think I need to add something else, like croutons or chopped green apples? I'd like to add thinly sliced red onion, but the crowd will include a significant number of children.
Perhaps a bit of cheese? Some very thinly sliced fennel bulb?If you're worried about the onions being too "strong" for the children, maybe try raw leeks, sliced thin? Or maybe golden raisins? Or Craisins (which are sort of sweet and have a nice color?)
I would make your basic salad, then anything you think people would be "iffy" on (croutons, feta cheese, onion, apples), put in bowls seperately, that way they can add it themselves if they want.
