Need advice re: cooking turkey in convection oven
The instructions w/ my convection oven said to reduce the heat by 25 degrees and reduce the cooking time 10-20% for all baking recipes. I have done that to good results.
However for meats, I use the convection oven exactly the same as a regular oven. You should be cooking your turkey until it is done, based on an internal temp reading, not time. If you don't have a probe therm. with an alarm, get one now...it is one of my most important kitchen tools.
Good luck, I think you will be pleased with the lovely browning you get with a convection oven on your roasted meats.
