A sure-fire munch with pre-dinner drinks - Newfoundland Cheese Biscuits
This never fails to delight. American friends, I do not know that the McLaren's Imperial Cheese is available in the US - I bring some down for Thanksgiving. But any "sharp cold-pack" cheese would probably do. The recipe doubles easily - and is one of those rare ones where subbing butter for margarine is NOT recommended ! Enjoy.
INGREDIENTS for 30 biscuits
1/2 tub (1/4 lb) McLaren's Imperial Cheese
1/4 tub (1/4 lb) "I can't believe it's not butter" or other high-end margarine
generous 1/4 tsp+ of cayenne
generous 1/4 tsp+ of Worcester Sauce
3/4 cup flour
2 cups Rice Krispies or similar store brand rice cereal
METHOD
Pre-heat oven to 425 f
a) In food processor or with sturdy fork, cream together the cheese and margarine. Add cayenne and Worcester Sauce and mix thoroughly. (If not using food processor, allow the cheese to soften for an hour or so at room temperature prior to commencing the recipe.)
b) Add flour and mix thoroughly.
c) Stir in the cereal - do not process or blend electrically
d) Place a fork in a cup of cold water
e) Place a heaping teaspoon of the mixture onto a baking sheet - 12 to a sheet - press down on the mixture with the tines of the fork to form a serrated surface
f) Bake 10-11 minutes - if desired, bake two sheets at a time, switching oven position after half baking time consumed
g) Allow to cool on a wire rack
