beltfish at ranch 99

so, i buy fresh fish from ranch 99 but am curious to see if anyone has ever cooked with or eaten a beltfish. i've never seen anyone buy it but it's always available. the fish is silver, about 2 - 3 feet long, narrow and the most striking thing, has yellow eyeballs. what does this fish taste like?

    1. Are you sure it's fresh? My wife usually gets it frozen. She cuts it in two-inch strips and stir-braises it in the usual suspects (Shaoxing wine, a little soy sauce, salt and a pinch of sugar, I think). It's tasty, firm-fleshed, not too fishy, and gweilo-friendly in that the flesh separates neatly from the bone. It's also a very economical fish.

          You're right, it's always been frozen. Thanks for the info, I'll give it a try.

          On a side note, I believe I've seen them serve the beltfish (deep fried in 2 inch strips)in the cooked takeout section.

              When I was little in Taiwan, my mom would just pan fried the fish in 3" section, just seasoned with salt.

                  Yep, season the fish with salt, coat it with corn starch and pan fry it. Belt fish has a lot of bones so do becareful.

                  I've seen fresh ones in 99 ranch once in awhile. They do come mostly frozen though.

              • it taste really good. and the price is great $1.90 for a whole fish.
                Have the market clean, cut in 2" strips, fry and take home to eat. I reheat any left overs on my George Forman grill at work and nobody has complained "it smells like fish". They commented oh that smells good. you can pick it up at most Asian markets and they will clean , and fry for you.it's like a perch in that it is thin and boney but worth picking the meat off and usually the boney part comes off whole.
