corn muffin recipe wanted

I just tried out a corn muffin recipe and it came out lousy. It called for corn meal, milk, 1 tbl sugar, and an egg. It wasn't rich or sweet enough for me. Any great recipes out there?

  1. It may not be exactly what your looking for but this recipe for Blueberry Corn Muffins is really good.

    1. This recipe would adapt to indiv servings.

      Sweet Cornbread
      1⁄2 cup butter (1 stick)
      1 cup sugar
      2 eggs
      1 cup yellow cornmeal
      1 1⁄2 cups all-purpose flour
      2 tsp. Baking powder
      1⁄2 tsp. Salt
      1 cup milk

      In a mixing bowl cream the butter and sugar together. Add the eggs; beating well. Then add the dry ingredients, alternating with the milk. Grease an 8-inch square baking pan and heat oven to 375 degrees. Pour into prepared pan. Bake for 30 to 35 minutes, or until golden brown.

      1. Add some monterey jack cheese and you will get the richness you are looking for

        1. Don't accuse me of being Sara Lee or whatever her name is, but I make mine using cornbread mix with cottage cheese added for's really good. Esp if you want sweet, since the mixes are sweet. If you want particulars, let me know.
