I just tried out a corn muffin recipe and it came out lousy. It called for corn meal, milk, 1 tbl sugar, and an egg. It wasn't rich or sweet enough for me. Any great recipes out there?
thanks

This recipe would adapt to indiv servings.

      Sweet Cornbread
      Ingredients:
      1⁄2 cup butter (1 stick)
      1 cup sugar
      2 eggs
      1 cup yellow cornmeal
      1 1⁄2 cups all-purpose flour
      2 tsp. Baking powder
      1⁄2 tsp. Salt
      1 cup milk

      Method:
In a mixing bowl cream the butter and sugar together. Add the eggs; beating well. Then add the dry ingredients, alternating with the milk. Grease an 8-inch square baking pan and heat oven to 375 degrees. Pour into prepared pan. Bake for 30 to 35 minutes, or until golden brown.

Don't accuse me of being Sara Lee or whatever her name is, but I make mine using cornbread mix with cottage cheese added for moisture...it's really good. Esp if you want sweet, since the mixes are sweet. If you want particulars, let me know.
