Help needed for an Opus One 2002 dinner
I'm planning a special dinner for my in-laws and was hoping to find the perfect meal to pair with the Opus One 2002. They love food and wine, so I was hoping to make it a night to impress! Ideas and/or receipes would be most appreciated!!! :)
2002 Opus One is way too young. Sit on the wine
and choose something else. If you absolutely must drink it,
then go for something grilled, that has some charring.
That will make the unsolved smoky, oaky flavors in the wine
almost taste like they're supposed to be there.
Find another fantastic wine and plan a dinner around it.
2002 sounds way too early to drink any mid-Napa cabernet. But if you're just interested in giving it a taste, can't blame you. BE SURE TO DECANT THE WINE AND GIVE IT "SWIRLS" in the decanter to soften it.
As for what to serve with it to match cabernet flavor very well, leg of lamb as mentioned above is a good choice, you could also do lamb kebabs. Here's some other great matches:
1) Prime rib. Cabernet is "the" prime rib wine. Alternatively, your favorite steaks.
2) Grilled portobello mushrooms. Add a dab of chevre goat cheese in the middle of the mushroom caps towards the end. Cab loves the grill.
3) A cheese plate of great cab matches: Paremesan Reggiano, Provolone (real italian not that "cylinder cheese"), Gouda (young not aged), Cheddar (4 years is great), and a plain Chevre goat cheese.
If you wanted to go with a decadent and "unconventional" match like "soup and sandwich" with Opus One try grilled steak and/or lamb cheddar-burgers with parmesan dust. Serve with a Beef & mushroom.
Just my 2 cents, but Opus One 2002 is not ready to drink yet. I'd think it needs another 6 years or so to open up. I think right now it will be awfully tannic.
Last month I was privileged to drink from a Methuselay of 89 Opus One. it was delicious, but still drinking "young!" Could have sat another 10 years with no problem.
If you're determined to serve it anyway, I think I'd go with a leg of lamb with Provençal or Greek spices.
