Hi. I was hoping some of you could provide a delicious and not difficult baked fish recipe along with some vegetarian and not to hish in calorie sides. The type of fish doesnt matter but would most like to stick to a white fish. Thanks.

Easiest baked fish recipe would be panko crumbs with a little butter and a squeeze of lemon juice when it comes out of the oven.

Or butter, lemon and capers. Some times I saute shallots in the butter, add lemon and capers and pour over the fish prior to baking.

Sides - name it, green beans, brussel sprouts, glazed carrots.......

The way I bake fish is to lay the filet on a piece of aluminum foil, place a few slices of onion on top, salt and pepper, a slice or two of lemon or lime and a smashed (not chopped) clove of garlic. Drizzle just a small bit of olive oil over and seal up the aluminum foil. Bake for about fifteen to twenty minutes. I've done it with salmon, but I'd imagine any fish would be nice.

Serve with steamed green beans or any veggie of your choice.

Our favorite baked fish is Fish Fillets Dijon by epicurious, link below, similar to kate's recipe above. We particularly like mahi-mahi cooked this way but I believe any white fish would do also. The dijon mustard adds a great flavor and no fat...I always reduce the amount of melted butter or just use olive oil. Steamed broccoli and roasted carrots are nice with it.
