Short Rib Sandwiches?

I'm thinking of throwing several pounds of short ribs in a crockpot at 5am or so, along with a 1/2 bottle of wine and/or good beef broth, and maybe some chili powder and puree of roasted garlic.

Then, at around Noon, I'm thinking of pulling the meat off the bone and making them into delicious sandwiches and going to a football game with some friends. Dark winter beer will also make an appearance almost invariably.

Can anyone point me in any direction with this idea? Any ways to add deliciousness? Or erroneous steps I've included?

    Howabout some carmelized onions for the sandwich?

      I was actually thinking of putting some duxelle up on that piece.

      I second the browning, and suggest using beer as the liquid and adding a bay leaf.

        Your recipe sounds great. I suggest you brown your short ribs before placing them in the crock pot.

          I had an awesome open-faced sandwich with shortrib, micro greens, horseradish and shaved parmesan once (at a restaurant Joypirate directed me to!)

            I point people towards meat. It's what I do.

            I think I'm going to incorporate the shaved parmesan. Good tip. I bought about 5 lbs. of short ribs at Harry Ochs in Philly's Reading Terminal and I'm ready to rock.

            I think a roasted garlic puree might be overkill. I'll just throw all the meat in with a wine/crushed garlic/chili marinade tonight and then brown it at 5am, and throw it in the crockpot with a similar mixture.

            I would be looking for some very sturdy crusty rolls for the sandwiches and maybe butter and toast the insides before filling. I imagne the sandwiches could get pretty soggy without them. Sounds good though.

              I did something similar just the other day, with my short rib leftovers. I basically just made braised short ribs (browned the ribs, sauteed onions/carrots/celery/garlic, poured in half red wine and half chicken broth, stirred, then added the ribs back and let cook in the oven for a few hours, then reduced the liquid to make a thick sauce). I think your chili powder/roasted garlic idea would work, and I'd also suggest pouring the liquid from your crock pot into a sauce pan and reducing that so you have a great gravy to put on the sandwiches.
