Also, I substituted bourbon for the apple brandy. It turned out great. I found that there wasn't a need to purée at all, as the apples just stewed and melted nicely without any help from me. I served the apple butter with these: Cheddar-Parmesan crackers http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_24891,00.html I doubled the cayenne (or was it tripled?) for some extra heat, and used an aged white cheddar. I made the dough in advance, and kept it rolled in tight logs wrapped in plastic, inside some tupperware. The app was a huge hit.
