Can this steak be saved?

valerie Nov 2, 2006 12:27 AM

On Monday I bought some cubes of beef kabobs. Today I put them in marinade (soy, garlic, ginger, sesame oil, etc.) with the intention of having them for dinner tonight.

My husband then informs me at 6:30 that he won't be home for dinner. I didn't feel like cooking it for myself, but now I'm wondering if the meat will still be good tomorrow (Thursday). Or can I stick the whole thing in the freezer in the marinade?

Not sure if this is true, but I had thought that the meat only starts to break down when acid (vinegar, lemon juice, etc) is adde to the marinade. So if that is the case, your steak is just getting flavor, not breaking down to become more tender, so it could be saved for another day.

Or you can cook it and make some kind of Philly steak-type sandwich with it tomorrow?

I really don't see any reason why not.

Thanks. There is a bit of vinegar in it -- just about a tablespoon -- so I guess it will still be okay.
