Infusers- how does this recipe sound

So i bought two 750 ml of smirnoff. I used the first for a cranberry/basil vodka and am thinking of doing a holiday spiced one too. Since i have never done this before with spices, i dont want to under/over do it. Here is what i was planning.

1 vanilla bean
2 sticks cinnamon
4-5 cloves
1/2 a nutmeg
a strip or two of lemon zest.

Will this be enough? Too much? how long should ingredients like this sit?

  1. I've done some infusions in the past. The only thing that jumps out at me is the nutmeg. I have a feeling that will wind up being way too much. I know at high doses nutmeg can produce headaches, so I'd definitely err on the side of caution there. Also, not sure about lemon zest for holiday flavors, maybe orange would be more appropriate?

    I can tell you that when I made my vanilla infusion I did one bean in a 750 mL bottle, and after 1 week it was good to go. YMMV.

    Infusions are fun.

      Ditto on the suggestion for orange zest over lemon zest! Yum!

      For spices (not including vanilla) steeping for one or two days was usually enough for me (oversteeping brought out more bitterness), then allowing to sit about 1 month before serving. You may want to consider making it in parts and blending it to taste after you've finished steeping.
