Chicken Marinade Question

I am making a dish that I clipped from the paper a while ago: Lemon-Ginger Grilled Chicken. The main ingredient in the marinade is lemon juice and it says to marinate for at least 15 minutes. What would be the max marinading time? I don't want to sacrifice the texture of the chicken... Thanks!

    That depends on what parts of the chicken you are using. Boneless breasts, probably no more than 3 hours. Whole chicken with skin attached can take several more. I think more than overnight is pushing it, though.

        You've inspired me. I also have some thighs that need eating. I just marinated them in jerk seasoning and will grill them in about 3 hours. Thanks for the idea.

          Enjoy! I have some jerk seasoning I bought in Jamaica that I haven't tried yet - that will be my next chicken thigh meal!
