Substituting Coconut Milk for Milk in Cornbread?
Do you think I could substitute coconut milk (or coc milk thinned with water) for milk in a cornbread recipe? I'm currently not eating dairy because my DD is sensitive to it.
I don't know about coconut milk, but I once made non-dairy cornbread with soy milk for use in a Thanksgiving stuffing. Of course the flavor of the cornbread was overwhelmed by all the other ingredients in the stuffing, so I can't vouch for how it would have worked as a solo item, but in the context of the stuffing, the texture and flavor were entirely acceptable.
