So I managed to buy an entire pound of these on accident (don't ask). They are yummy, but good lord I've been snacking on them for a week and they're not going anywhere. I've got about a half-pound left and was wondering what I might get from y'all if I asked for suggestions here -- creative ways to use the suckers, olive salad recipes, etc. (Caveat: I am vegetarian.) TIA!

I would think they would be a great addition to any salad, or perhaps an Italian-style eggplant stew. If they are very large, I hate to put this evil idea in your head -- Michael Chiarello has a recipe on the Food Network site where he stuffs olives with sausage meat, coats in crumbs and fries....I'm thinking that cheese-stuffed olives done the same way would be seriously tasty.
