a tasty rum drink with herbal simple syrup
My husband is usually the one who concocts new recipes but last night I wanted to surprise him with something tasty when he came home from a tough day at the office. I started by making a simple syrup infused with basil, mint and ginger - I figured it was a way of using up some of our vast supply of herbs before the frost gets them. Eyeing what we had on hand, (limes that were on their last legs, a can of coconut milk and an orphan can of diet ginger ale, both leftover from a summer party) I came up with the following:
4 oz. fresh lime juice
4 oz. white rum
2 oz. ginger/mint/basil simple syrup
2 oz. coconut milk (not cream)
1 can diet ginger ale
4 dashes orange bitters
a couple of small mint leaves
Crush the mint leaves and rub them around the glass rims. (I prefer the tall, thin "zombie" glasses.)
Shake and pour over ice.
This made two rounds with a bit left over but could easily be halved or quartered.
I still don't know what to call it, but we liked it very much. It is a very summery drink, but not over-sweet or too high in alcohol.(I am not a fan of being loopy while cooking!) The simple syrup was a huge hit and we'll have to experiment with it more in the future - I made a good-sized batch, so there's a cup or more of it left.
My Mango Madness is actually pretty much the same as yours, minus the coconut, ginger & basil.
Just blend one ripe Mango with: fresh OJ, lime juice plus the fresh mint & orange zest simple syrup. Strain and blend w/ice & Rum to taste. If it's too thick, add sparkling water, then pour over ice & add mint sprig.
The actual proportions depend upon the ripeness & flavor of the mango. If it's a sweetie, add less syrup & lime juice. If it's a deader jack up the syrup & perk it up w/more lime.
A summer hit for sure, but friends & foes expect it out of season, so my mango and mint radar stays on most months.
