Hi!I am making 15 bean soup tonight and got fresh pork hocks vs. my usual smoked ham hocks. And I am not going back to the Acme.......Should I use the fresh or no?Thank you!
The fresh hocks will give your soup body and flavor, but no hickory-smoke flavor. I would use them -- and roast them first -- but realize the flavor will not be the same.
