They are a common fixture in Japanese New Year food, and are dyed red. In Japan, they are only seen during the New Year holiday.
The farmer who sells crosnes is the Weiser Family Farm. I, too am looking for these at farmers market. Yes, they serve to a number of restaurants especially to French laundry that you have mentioned earlier.
I am looking for these too.
Weiser is in the Tehachapi / Bakersfield area and are at markets in the LA area.
Have you had them? I love crosnes. Hate preparing them though.
what do you hate about the prep?
They're were just sold at Union Square Market this pass Saturday. From the potato guy. What were you going to do with them?
Union Square Market in what city?
If I can find some, then I'll figure out what to do with them.
