Making cottage cheese
Has anyone tried this? Looking for other info about cottage cheese I found a few recipes for making cottage cheese. It looks easy. Have you made your own? What advice would you have?

I have made several types of cheese, though not cottage cheese. Still, the methods are often similar, so this is what I recommend:
Avoid ultra pasturized milk.
If you can get your hands on milk that has not been homogenized, that is a plus.
I would go with the recipe that does use rennet as it's kind of a sure thing that it will work. Clabbered cheeses can be tricky, so I'm told.
Cheesemaking is a huge topic, but the best advice I can offer is: try it! It's really a lot of fun, and there are so many varieties to try, from simple to difficult.
