my favorite is some fat white steamed asparagus with hollandaise sauce.

If you are new to white asparagus, be aware it must be peeled, unlike green asparagus.
Peeled, quickly blanched, wrapped in thin strips of Serrano ham (or prosciuto).
Serve it roasted and cold with aïoli.
anything that you would do with green asp. blanch it and toss with lemon juice, shaved parm, Italian parsley and crushed pistacios and drizzle a good olive oil - serve hot, cold or room temp with toasted or grilled rustic bread. yum!
