Italian Sausage Substitute?

I am looking for an acceptable substitute for Italian sausage which is not available where I live.

If I had some ground pork what should I add to get the right flavour?

The recipe I want this for is a baked ziti with italian sausage and fresh fennel.

  1. You'll need more than ground pork meat: at least 1/3 of the ground mixture should be pork fat. And the mixture should be coarsely ground.

      Thanks for the info and the link, but I live in England, which is the main reason I can't find the real deal to begin with.

      Is pork fat something you can buy on its own, I wonder?

        This is a good-looking recipe (though the caraway seed is a bit odd; all seeds should be toasted and crushed to bring out flavor). It also explains the need for the fat.
