I am looking for a starter and side for this menu that I am preparing this weekend for a small dinner party:

1st course - Butternut Squash Soup with Cider Cream
Entree - Braised Short Ribs with Horseradish Gremolata

I'm thinking either green beans w/almonds or brussel sprouts w/ pancetta as a side.

Would like to have a nice starter, perhaps a salad, or something light, prior to the soup. Perhaps something we can have over cocktails??

Will have a cheese plate and store bought dessert.

Thanks in advance for any recommendations.

    Unless it is a very formal dinner or you are planning to serve small portions, the menu is filling enough as it is...skip the starter. Serve some roasted nuts or olives with cocktails, then the soup. I prefer a starch with shortribs if there is a braising liquid, either mashed potato or polenta. Skip the side and serve a small green salad with your cheese course.

      Short ribs....I know I would love a serving of garlic mashed potato with that....

        I'd have to agree with the mashed potatoes...or buttered noodles with sauce from the ribs. A simple salad on the side.

          I made braised short ribs for a dinner party this past weekend. To keep cooking simple, I made a mixed root veggie roast as starch and vegetable combined. I used Yukon golds, sweet potatoes, baby turnips, parsnips, carrots and fennel. It made a good combination with the rich ribs.
