Use huckleberries in recipes calling for blueberries. The results will be even better. Also great in a sauce for quail, fois gras or venison.
I once had Nancy Silverton's huckleberry shortcake at Campanile, the restaurant she and her ex-husband owned in Los Angeles. You could make something similar by using a shortcake/biscuit-type base topped with the berries (crush some of them with a little sugar)and some creme fraiche.
