1.5 cups of lobster corn stock - what to do?

I found 2 cups of frozen lobster corn stock that I made in July in my freezer. I guess I could make a small serving of a soup or chowder, but would rather do something else. Is that enough to make a risotto for two people with 3/4 cup of Aborio rice? Any ideas?

  1. ummm... it might be enough if you augment with a little wine... are you serving anything besides risotto?
