Duck Fat

So, I ordered some duck fat online. I was thinking about using it for home cut frites and maybe some white beens and tasso. any good suggestions for other uses?

    I love the roasted potatoes with rosemary recipe in the Zuni cookbook. The duckfat makes a huge difference.

      Indeed. I often make that with thyme, nutmeg, red pepper, and black pepper.

      Also good made with goose fat.

      I've rubbed it on a whole turkey before roasting it instead of sealing it with butter. I'm sure it would work on chicken as well.

        I just roasted a chicken rubbed with duck fat a few days ago. I put on a nice layer of the fat, then rubbed on some sea salt, fresh ground pepper, smoked paprika, and minced garlic. Came out great. I saved the additional chicken / duck fat to use again. I use duck, chicken, and bacon fat to amp up flavors in many things I fry or saute.

          Use it to fry eggs -- yum. Also good for sauteeing chard or spinach.

            Caramelize onions very slowly in duck fat and you are in for a sublime treat. Use the onions in a tart, or mixed with some potatoes. Oh, I'm salivating at the very thought.
