Does anyone know the name of the Celeste owner? I want to write him to make a special request for my wifes birthday. (No idea whether he would be interested in honoring it, but it seems worth a shot.)

Cityseach says his name is Carmine, so thats a start.

The man who is always there, and who I assumed was the owner (but maybe he is only the manager) is named Carmine, not Carmine like on Laverne & Shirley, but Car-mee-nay.

Yes, I have met Carmine, and he does talk about "his" restaurant in Italy (I was led to believe that the the "owner" has three restaurants, and that the cheese that is imported is served at all three).
