        <content>I have a supper club coming up that I have signed up to make Pastitsio.  I have found a bunch of recipes online, but I'm wondering if anyone has a tried and true one.  Any help is appreciated.  Thanks!</content>

      <content>My mother, who is part Greek, made it when I was growing up. There are lots of authentic versions of the recipe, so don't worry. As long as it is a layered casserole of ground seasoned meat and macaroni, with a white cheese sauce, it should be fine. Good luck!</content>

      <content>my mom makes this and its delicious


Pastitsio  serves 4-6

1 large onion, chopped
4 clove garlic, minced
4 T butter
1# ground lamb or beef
1-#2 can solid pack tomatoes, well drained and chopped
salt and pepper
1/4 tsp nutmeg
1/2 tsp cinnamon
1 tsp msg
2 eggs, beaten
1/2 cup grated parmesan
1/3 # elbow macaroni, cooked and drained
1 eggplant, peeled, sliced 1/4" thick, sauted in evoo till tender.

saute onion and garlic in 2T butter until soft. add meat and cook until redness disappears.
add tomatoes and cook until almost dry.
season with spices. add eggs and 1/3cup grated cheese
combine meat mixture with macaroni and pour into a deep well-greased baking dish. it should be about half full. place slices of sauteeed eggplant over meat macroni mixtue. pour the cheese custard over all. melt 2T butter and pour over top. then sprinkle with remaining cheese.
bake at 350 for about 45 min, or until browned.

cheese custard
1 T butter
2 tsp cornstarch
1-1/2 cup milk, heated
3 beaten eggs
1 cup ricotta
salt pepper

melt butter in a saucepan, add cornstarch and cook on low, stirring constantly. add hot milk. cook until slightly thick. temper in eggs...
remove from heat and add ricotta.
