Can You Recommend Cooking Instruction DVDs?

I've been borrowing cooking videos put out by the California Culinary Institute from our library but am not thrilled.

Does anyone know of a good instructional series on dvd or video? My skills are probably low-medium in this community. I do cook some and read about it constantly but have never purchased truffle oil, if that gives you an idea.

If you have any suggestions I'll be grateful. I may ask our library to consider adding to their collection or I'll try ebay for a used set.

Thank you for any recs!

    1. The PBS show "America's Test Kitchen" has several seasons out on DVD. Most of their offerings are fairly easy to follow and focus on technique.

        1. Thank you both very much. I'll check out the eGullet tutorials and will see if the ATC shows are available at our video stores, or through interlibrary loan or ebay or something.

Strange as it may seem, we don't have cable tv and I almost never see television at home. I rely on dvds.

Thank you again, I really love cooking shows and look forward to looking into these for entertainment as well as education.
