bacon grease

how long does bacon grease last in the fridge?

Saturated fats last much longer than unsaturated (mono or poly) fats - however - that's based on a pure, clean, relatively unoxidized (burnt) sample. Cleanly rendered and filtered bacon grease will last a long, long time. But contaminated or burnt stuff will eventually turn rancid, even in the fridge.

As long as it is in a sealed container. Some people say it actually improves with age. There is a burger joint down south that supposedly cooks its burgers in 85 year old grease.
